Pico de Gallo
1 Medium Onion
1 T Salt
1 Lemon
2-3 Roma Tomatoes
Cilantro
Chop onion, add salt (adjust amount of salt depending on your taste) and juice of one lemon. Stir and set aside.
Chop tomato and cilantro.
Add to the onion mixture.
Let the pico sit for about an hour so the flavors can come together. We love this with lemon chicken or tortilla chips.
